Yum

Gatte Ki Sabzi



















Ingredients:

For Gatte:

Gram Flour                          - 1 cup
Turmeric Powder                 - 1/2 tspoon
Red Chilli Powder               - 1/2 tspoon
Carom Seeds                        - 1 tspoon
Salt                                       - as per taste
Yogurt                                  - 1/4 cup
Oil                                        - 1 tbspoon

For Gravy:

Onion                                   - 1 cup finely chopped
Tomato                                 - 1 cup finely chopped
Ginger                                  - 1 inch piece grated
Garlic                                   - 4 cloves crushed
Yogurt                                  - 1 cup
Turmeric Powder                 - 1 tspoon
Coriander Powder                - 1 tspoon
Cumin powder                     - 1 tspoon
Red Chilli Powder               - 1 tspoon
Mango Powder                    - 1/2 tspoon
Garam Masala                     - 1/2 tspoon
Mustard Seeds                     - 1 tspoon
Cumin Seeds                       - 1 tspoon
Salt                                      - as per taste
Oil                                       - 2 tbspoon

Method:

For Gatte:

Mix all dry spices in gram flour. Add oil to the gram flour and mix.
Slowly add yogurt and mix it. Remember not to add all ingredients together as gram flour tends to get sticky. You may just use only a bit of the yogurt.
Make it into a firm dough, firm enough to roll it into cylindrical shapes.
Now, take a small ball of the dough and roll it into 1/2 inch thick cylindrical shape, as shown in the pictures.












Now take a pot and boil water in it. Take enough water to put all the above made rolled gatte in it.
Now, add the gatte in the boiling water. They should be fully emerged in water.













It should take about 10-15 min. Check by inserting a knife in one of the shaped roll and make sure knife comes out clean.
Once all rolls are done, drain the gatte rolls out of water. Do not throw water as we will use it for the gravy.
Cut about 1/2 - 1 inch thick gatte or the size you would like your gatte to be.
Once they are dried out shallow fry them in 2 tbspoon of oil or deep fry them as you like.

For Gravy:

Add all dry masalas Coriander powder, Turmeric, Garam Masala, Mango powder, Red Chili, Cumin Powder to yogurt and mix it well till smooth.
Take a thick wide pan, add oil. When hot, add Mustard, Cumin and let them crackle.
Now, add ginger and garlic and fry for a minute. Add onion and fry till it is translucent.
Add tomato and  fry till it is all mix very well and start leaving the oil.
Add the yogurt mix and mix it all till the gravy starts boiling.
Now, add the gatte pieces in it, cover and cook for 5 more min.
Add the saved boiled water as needed.
Your Gatte Ki Sabzi is ready to serve with Chapati, Rice or Parantha.
