Yum

Veggie Raita

































Ingredients:

Cucumber cubes             - 1/2 cup
Tomato cubes                 - 1/4 cup deseeded
Green Pepper cubes       - 1/4 cup deseeded
Yogurt                            - 1 cup
Salt                                 - to taste
Cumin powder               - 1 tspoon
Red chilli powder          - 1 tspoon


Method:

In a mixing bowl, whisk the yogurt till it's smooth.
Add in the cucumber cubes, capsicum cubes and tomato cubes, mix well.
If it's too thick add 1-2 tblspoon water into the bowl.
Add salt, red chilli and cumin powder into the bowl and mix very well.
Garnish with mint or fresh coriander.
This Raita goes very well as the side dish for Lunch or Dinner menu.

Yum

Mint Cucumber Raita


















Ingredients:

Cucumber                                 - 1 cup grated / fine cubes
Mint Leaves                              - 1/2 cup finely chopped
Salt                                            - to taste
Sugar                                         - 1 tspoon
Cumin Seed Powder                 - 1 tspoon
White pepper Powder               - 1 tspoon


Method:

Whisk yogurt to smooth consistency in bowl.
Add in the salt, cumin powder, pepper powder, sugar and whisk again.
Now add in the cucumber cubes and mint in the bowl and fold gently.
Taste it and adjust the salt and sugar accordingly.
Chill the Raita in the fridge for 2 hours before using.
Enjoy this Raita with Lunch or dinner. This can be a dip for fiery pakodas.
