Yum

Spinach Handvo



















Ingredients:

Handvo Batter:

Rice                                   - 1 cup
Lentil Mix                                 - 1/2 cup each ( arhar,chana daal )
Fenugreek Seeds           - 1 tspoon
Yogurt                                       - 2 tblspoon
Baking Soda                             - 1 tspoon
Green Chili Paste                     - 1 tspoon
Ginger  Paste                          - 1 tspoon
Garlic  Paste                            - 1 tspoon
Turmeric Powder                     - 1 tspoon
Red Chilli                  - 1/2 tspoon
Lemon Juice/Pickle Gravy      - 1 tspoon  (Optional)
Citric Acid                               - 1/4 tspoon
Baking Soda                            - 1 tspoon
Jaggery                                    - 1/2 cup
Salt                                          - 2 tspoon
Oil                         - 2 tspoon
Spinach                 - 1 cup finely cut and blanched

For Tempering / Sprinkle :
Oil                                           - 2 tblspoon
Red Chilli                                - 2-3 whole
Hing                                         - a pinch
Mustard Seed                           - 2 tspoon
Sesame Seeds/Til                     - 2 tblspoon + 1 tblspoon for sprinkle
Peanuts                                     - 1/4 cup
Fried Onions                             - 2 tblspoon



















Method:

Making The batter:
Wash and Soak Rice and both lentils along with fenugreek seeds for overnight.
Now grind soaked rice, lentil and fenugreek seeds with the help of water.
Make a thick smooth paste, sprinkle water while grinding.
Do not mix a lot of water to make it a runny batter.




















Making Handvo Mixture to Bake:
Mix the batter well.
Now add 2 tblspoon yogurt, 1 tspoon salt and mix well.


















Keep it to ferment. If the weather at your place is hot or warm keep the batter for 4-5 hours and if it cold and chilli ferment it for 7-8 hours.


















Once fermented add jaggery and mix well to get the jaggery melted very well.
Now we will add the spinach in the batter and mix well to avoid any lumps.
Now its time add the spices.
Add in the green chili, ginger, garlic, red chili, turmeric, salt, citric acid, baking soda, oil and also the pickle gravy or lemon juice.


















Mix the batter very well to form lump free batter.
Taste it and adjust the Spices accordingly.



















Pre-heat the oven to 190c and grease a 8"-10" pyrex tray.
Now we will prepare the tempering.




















Warm the oil in a pan, add in the mustard seeds, sesame seeds, red chilli, hing, Peanuts and let them pop.
Now add the tempering to Handvo Batter and mix well.

















Pour the batter into the greased tray.
Sprinkle some more sesame seeds and fried onions over it.
















Now bake the Handvo for 1 hour or until a toothpick inserted comes out clean.
Cool the handvo and cut into desired sized pieces.
























Serve with assorted chutney or pickles.
This is a very good option as a breakfast, brunch or starter in a party.

Leftover Vegetable Pulao and Cheese Patties

I quite "not throw" but use the leftover food most of the time, especially the dinner leftovers. Most of the dinner leftovers make very good Breakfast Dishes. I always look for the "leftover Rice and Chapati" to use in making something delicious for breakfast.

For instance, from one of the dinner recently, I was left with 1 and 1/2 cup of Vegetable Pulao. I was thinking it's not even a full portion for someone. So thats going to be converted into something else. Kept it carefully in the fridge and next morning i was up with a recipe in mind for a tasty breakfast.

I gathered all the ingredients, in my mind for this breakfast treat. Mixed it all up along with the leftover Pulao, shallow fry that and we have yummy, tasty, delicious Patties to go with Buns, Cookies and morning drinks for breakfast.

Here's presenting Leftover Vegetable Pulao and Cheese Patties. Kids simply loved eating them with out any fussy morning face, Hubby asked me to make them again whenever we have any leftover pulao and me so happy to see them having something they liked.

Ingredients:

Leftover Vegetable Pulao                     - 1 - 1/2 cup
Gram Flour                                           - 3 tblspoon
Grated Cheese                                      - 2 tblspoon
Desiccated Coconut                             - 1 tblspoon
Salt                                                       - to taste / optional
Red Chili Flakes                                  - to taste / optional
Lemon Juice                                        - 1 tblspoon
Oil                                                       - 2 tblspoon to shallow fry


Method:

In a heavy bottom pan, dry roast the gram flour for 3-4 minutes.
Tip over the roasted gramflour into the Pulao bowl.
Now add cheese, salt, chili flakes, lemon juice and coconut into the same bowl.
Mix well with your hand to give it a texture of loose dough. Refer the picture.

Divide the Pulao dough into 8-9 equal pieces with greased hands.
Heat a heavy bottom pan on medium heat.
Grease your hands again and shape the dough balls into patties.
Shallow Fry the Patties , 4-5 at a time, giving them space to cook properly.
Fry them until golden from both sides, flipping carefully in between.
Once all of them are done, Patties are ready to be served, as a starter, light lunch with salad, tea-time snack or breakfast as we did.
You can also sandwich them with buns, baps or Pav with Chutneys, Condiments or sauces.
Enjoy the light, crunchy and filling patties.


Notes:
You can also use Oats powder, but I was run out it so used gram flour.
You can replace Cheese with crumbled Paneer.
Coconut is totally optional.
Spices are also optional, if the Pulao is spiced and floured extremely hot.

Hyderabadi Vegetable Biryani

Biryani, is a rice dish, authentically made with Rice, Nuts, spices and meat/vegetable. In olden days or say the authentic way of making Biryani is using a big clay/aluminium pot, called HANDI.
There are authentically two types of biryani, Pakki and Kacchi. Biryani is served with Raita, Mirchi ka salan, baghare baingan and salad as a side dish.
Biryani can be of any type, such as Daal Biryani, Soya Biryani, Chicken Biryani, Beef Biryani, Egg Biryani, Shrimp Biryani and Fish Biryani. Vegetarian people use choice of mixed vegetables to replace the meat. One more ingredient which is very visible, looks wise and taste wise is Onions. Plenty of fried onions, mint and coriander.



Hyderabadi Biryani is also called the "Kachi Akhni" Biryani. Where, marinated meat/vegetables and the rice are cooked together. Since all ingredients cook together, making a perfect Hyderabadi biryani requires experience to balance the marination time, moisture, heat etc.
Awadhi biryani (aka Lucknowi biryani) lives up to the original persian meaning of the the word Biryani (fry separately) where meat and rice are cooked separately and baked together in last stage of cooking. Lucknowi biryani is cooked mainly with whole garam masala, giving dum from bottom as well as from top.
Sindhi biryani, famous in Pakistan, combines most of the local produce, such as prunes and apricots.
Bombay biryani is very similar to Sindhi and includes potatoes. Bombay biryani is also referred as Bohari biryani. Calcutta biryani is also cooked similar to lucknowi biryani but they use whole boiled potato and kalaunji(Onion seeds) also. This is just one of the many kinds of Biryani that was cooked in Nizam's kitchen long time back.


It has been said that This biryani dish was invented after the mix of Mughal and south indian cuisine back in the times of Nizam, when they ruled Hyderabad. There are variety of Biryani dishes based on Region in India, like Hyderabadi Biryani, Thalassery Biryani, Lucknowi Biryani, Bombay Biryani and so on.....
Here the one I tried to make is called Hyderabadi Vegetable Biryani, which was invented at the time of  the rule of Asaf Jah I. This Biryani is known for it's best layering and spice mixes. This Biryani has layers of vegetables and rice, soaked in spices, yogurt and saffron. Some people use Kewra or Rose water to give it another level of aroma.


I've been making several types of Biryani in my Kitchen and believe me friends, when you cook Biryani, your kitchen smells amazing, aromatic and awesome.

Ingredients:

To make Rice:
Basmati rice                                      - 2 cups
Green Cardamom                             - 2
Cloves                                               - 2
Cinnamon                                         - 1/2 inch stick
Bay Leaf                                           - 1
Water                                                - 4 cups
Salt

To Prepare Vegetables:
Carrot                                                - 1 peeled and diced
Potato                                                - 1 peeled and diced in small cubes
Green Beans                                      - 1/2 cup chopped
Mushroom                                         - 5-7 chopped
Green Peas                                        - 1/2 cup
Onion                                                - 3 medium sliced
Green Chili                                       - 2 slit in 4
Ginger                                               - 1 tblspoon chopped
Garlic                                                - 1 tblspoon
Ghee/Oil                                           - 4 tblspoon
Black Cumin                                    - 1 tspoon
Black Cardamom                             - 1
Cloves                                              - 4
Cinnamon                                        - 1 inch stick
Bay Leaf                                          - 2
Mace                                               - 1
Star Anise                                       - 1
Coriendar Seeds                             - 1/2 tspoon
Black Pepper                                 - 4-5
Salt                                                - to taste
Yogurt                                           - 1 tblspoon
Turmeric Powder                          - 1 tspoon
Red chilli Powder                         - 1/2 tspoon
Garam Masala                              - 1/2 tspoon
Cashewnuts                                  - 2 tblspoon chopped
Green Raisins                               - 2 tblspoon
Almonds                                       - 2 tblspoon chopped
Fresh Mint                                    - 1/4 cup chopped
Fresh Coriander                            - 1/2 cup chopped

Preparing the Layers:
Yogurt                                          - 2 tblspoon whisked to smooth
Saffron                                         - 4-5 strands
Milk                                             - 1 tblspoon


Method:

Wash the rice thoroughly and soak in water for 20 minutes.
After 20 minutes  you can microwave or pressure cook the rice.
You are required to cook the rice till they are 3/4 done.
The rice should not be fully cooked but almost cooked, that you can fluff them after draining the excess water from them, if any left.
I microwaved the rice and cooked it for 12 minutes at full power. Took the extra water out, fluff the rice and kept them aside.
Authentically, biryani is made in the pots, known as handis. But as I do not have access to Handi here, so I made it in my big heavy bottomed deep vessel (Bhagona).
Heat oil/ghee in the vessel.
Add all whole spices: cumin,cardamoms, mace, cloves, cinnamon, coriander,black peppers and bay leaves.  Fry it till start crackling.
















Now add the sliced onions. Fry the onions until translucent.
















Now add the green chilli, ginger and garlic. Fry for a minute.
















Now add the turmeric,  red chili powder and garam masala. Mix it well.
















Now we add the vegetables into the vessel.
















Whisk and add 1 tblspoon yogurt into it.
















Mix well and add salt into it with 1/2 cup of water. Cover with a lid and cook for about 5-7 minutes or until the vegetables are tender/cooked.
Now add chopped almonds, raisins and cashewnuts to the cooked vegetables.
















At this stage, check the taste of salt, if less add some more to your taste.
Now warm 1 tblspoon of milk.
Add saffron to it, keep it aside to let the mixture cool.
























Now whisk and add the yogurt in to this mixture and mix well.
















Now pour half of saffron-flavored yogurt, mint and coriander leaves. Mix well with vegetables.
Take half of the vegetables out in a box.
















At this time, Put a heavy griddle on the low flame, place your biryani vessel on the griddle.















Now layer half of the cooked rice over the leftover vegetables in the vessel.
















Pour the 1/4 of saffron-flavored yoghurt.
















Add one more layer of Vegetables, which we took out before.
















Spread the layer of remaining rice. Add the remaining yogurt mix.
















Place a moist tea-towel on top. Cover with a lid.
















Then seal with wheat flour dough or keep a heavy weight on the lid. I could not find anything heavy other than my Dumbbells :) Sounds Dumb but effective :)
















Cook for another 20-30 minutes like this. Keep the flame to low at all time to avoid burning your biriyani.
Serve this vegetable biryani with your choice of raita, salad, pickle, papad and side curry.
The best accompaniment with this Biryani is Mirchi ka Salan, Dahi ka Raita and Baghare Baingan which are the traditional way of serving it.

Mix Lentil & Rice Flour Chilla





















Ingredients : 

Lentil Paste                       - 5 tblspoon (5 lentil mixed soaked and grinded to smooth paste)
Rice Flour                         - 3 tblspoon (fine flour, soaked in 2 tblspoon water)
Coriander                          - 2 tblspoon chopped
Green Chili                       - 2 grinded with lentils
Salt                                    - to taste
Amchoor                           - 1 tspoon
Oil                                     - 2 tblspoon


Method:

Wash and soak Toor, Moong, Masoor, Chana and Urad daal over night.
Soak the rice flour 15 minutes before making chillas in 2 tblspoon.
Wash again and grind to smooth paste , add the green chilies while grinding the lentils.
In a mixing bowl, add lentil paste and soaked rice flour together with salt, amchoor and freshly chopped coriander.
Mix this paste well. Add water to make it in pouring consistency, not too runny like Dosa batter, make it like uttapam batter.
Heat a griddle or non-stick pan over medium heat.
With a drop of oil grease the griddle/pan. spread a ladle full of batter gently on the griddle.
Let it cook, few drops of oil around the edges of the chilla. Flip it over once sides starts to get golden.
Cook it from both sides.
Keep the flame to medium if the key for non-sticky chillas. If the heat
will be high they will burn and stick to griddle.
Enjoy the chillas with choice of chutney.

3 Beans Rice



























Ingredients:

Kidney Beans                    - 1 cup soaked and boiled
Quinoa Beans                    - 1 cup washed and soaked
adzuki beans                      - 1/2 cup soaked and boiled
Basmati Rice                     - 2 cups cooked
Onion                                - 1/2 cup finely chopped (Optional)
Garlic                                - 1 tspoon pureed
Ginger                               - 1/2 tspoon pureed
Oil                                     - 1 tblspoon
Cumin Seeds                     - 1/2 tspoon
Asafetida                           - a pinch
Salt                                    - to taste
Garam Masala                   - 1 tspoon
Lemon Juice                      - 1 tblspoon
Green Chili                        - 2 finely chopped (optional)
Fresh Coriander                 - 1 tblspoon or few leaves to garnish


Method:

Soak Kidney beans overnight and boil them, Soak Adzuki and Quinoa beans for 2 hours and boil. Keep all 3 beans aside.
In a wide heavy pan, heat oil. When Oil is hot add cumin and asafetida.
Once cumin starts to splutter add onion, saute for 2 minutes once translucent, add in the ginger and garlic puree. Cook for 2 minutes.
Now add salt, garam masala and green chilies into the pan. Mix well.
Add in the beans to the pan and mix well. Add the lemon juice and cook the beans for 2 minuets in medium flame with all other masalas.
Once mixed well, add in the the precooked rice, mix gently but well.
Put the flame to low and cover the pan. Cook for 3-5 minutes and switch off the flame.
Garnish 3 beans Rice with some fresh coriander and serve with your choice of yogurt dip or drink.
This 3 beans rice is very healthy and easy to make dish. Also very good one for you when you are dieting.

Carrot, Mushroom and Mint Rice


























Ingredients:

Basmati rice               -2 cup cooked
Carrots                       -1/2 cup cut into thin sticks/small cubes
Mushrooms                -1/2 cup cut roughly / small cubes
Ghee/oil                     -1 tblspoon
Fresh Mint                 -2 tblspoon chopped + few leaves for garnish
Mustard Seeds           -1/4 tspoon
Asafetida                    -1 pinch
Curry Leaves             -5-7
Green Chilli               - 2 chopped finely
Garam Masala           -1/2 tspoon
Lemon Juice              -1/2 tspoon
Salt                            -to taste

Method:

Wash and Par boil the Carrot sticks until tender.
Wash and cut the mushrooms.
Heat the oil into a heavy bottom pan.
Add in the mustard seeds, asafetida, curry leaves and chopped green chilies.
Add in the mushrooms and fry for 2 minutes, add in the carrots as well. Mix well.
Add in the garam masala, salt and give it a good mix.
Now add cooked basmati rice and give it a good mix. Keep the flame to medium.
Add in the lemon juice and cook for another 5 minutes.
Now switch off the flame, sprinkle some fresh mint leaves and mix again.
Garnish with some more mint.
Serve the rice as a breakfast or as a side dish in your dinner and lunch parties.

Lemon Rice




























Ingredients:

Basmati Rice                       - 2 cups cooked
Lemon Juice                        - of 1 big lemon
Curry leaves                        - 8-10
Whole Red Chili                 - 2
Asafetida                            - a pinch
Mustard Seeds                     - 1/2 tspoon
Chana Dal/Urad Dal            - 1 tspoon mixed (black gram and yellow split lentils)
Turmeric Powder                - 1/2 tspoon
Green Chillies                     - 2 chopped
Ginger                                - 1 tspoon chopped very fine
Peanuts                               - 1/2 cups roasted
Oil                                      - 1 tblspoon
Salt                                    - to taste

Method:

Take a pan and add oil to it.
Add whole red chili, hing, mustard seeds, black gram and yellow split lentils and saute for 2 minutes.
As soon as the mustard seeds start spluttering, add green chillies, ginger pieces, curry leaves and roast for 1 more minute.
Now add turmeric and salt. Now add roasted peanuts into it.
Pour the freshly squeezed lemon juice and put a lid on the pan.
Now add the rice into the pan and mix very well.
Serve hot or cold with a pickle, yogurt or on its own.
