Pizza Pinwheel Bites

When you are being lazy and not in mood to cook, them immerge a new recipe, which is called a saviour. Saviour from the snack demand of your kids, saviour when you called some friends for tea and you don't find enough to serve, Saviour from weight gain with whole big flat slice of pizza......

I have had a tea-party with some of my GFs and that time got the idea of making them. The time for our get together,was late evening so everyone wanted something to fill them up until dinner time.

I made these bite size pizza wheels to satisfy all of us and at the same time cut down my work at kitchen. We had few store bought snacks with this and Green Tea with lemon. Lots of chat about food and fashion and what else you want to spend an evening with friends.

Pizza is something we all love, be it a child or an adult, in my house the case is like that. I try making it a bit more healthy with different flour, Gramflour, wheat flour and others and sometimes mix them all together.  I use light cheese to make it good for me as well. sauce can be substituted with any of the sauce or relish, it can be salsa as well. Believe me they all taste good in this.

Ingredients:

Pizza Base Mix                      - 1 Pkt (290Grm)
Green Pesto Paste                  - 2 tblspoon (Can be substituted with pizza sauce)
Italian Seasoning                   - 1 tblspoon
Grated Mozzarella                 - 1/4 cup
Mix Veggies                          - 1/2 cup (parboiled)
Tomato Ketchup                    - 1 tblspoon (optional)
Salt                                         - to taste
Red Chili Flakes                     - to taste (optional)


Method:

Knead the dough, as per the packet instructions, keep aside to rise.
Wash the mix veggies. I used frozen ones, so there was carrot,peas,beans,peppers,mushrooms and corn.
Parboil the veggies in microwave for 5-7 minutes.
After 30 minutes, dough will rise and get fluffy.
Preheat the oven on 200c and line a baking tray with parchment paper.
Punch it down and roll in a shape of square on a lightly floured surface.
Spread the pesto sauce on it leaving 1 inch each side.















Now spread the veggies, sprinkle some salt, red chili flakes and italian seasoning and tomato ketchup.
















Now sprinkle grated cheese on it.
















Start to roll the dough gently but tightly tugging inside.





























Seal the dough at the end from all sides. Please refer the picture.












Now cut the roundels of the rolled dough log. They should be 1 n half inch thick.














Place all the roundels on a lined baking tray.














Sprinkle some more grated cheese on each pinwheel.














Bake them on 200c for 15-17 minutes or until the cheese starts to get golden.














Once baked let them cool of the wire rack for few minutes before they are good enough to handle with bare hands.

Pizza Pinwheel bites are ready to serve. I served them on a small get together with friends over tea, but these can go very well with any party or get together.

Whole-Wheat Veggie Bowl


























Ingredients:

Whole Wheat Bread Slices - 6
Grated Cheese                     - ½ cup
Mix Veggies                        - 1 cup (Corn kernels, peas, bell-pepper, spinach, mushroom)
Oregano                               - 1 tspoon
Chili Sauce                          - 2 tspoon
BBQ Sauce                          - 2 tspoon
Oil / Butter                          - 1 tblspoon to grease the muffin tray
Soft Cheese                         - 3 tblspoon (1/2 each slice)
Salt                                      - To taste
Olive / Jalapeno                  - 6 slices


Method:

Preheat the oven on 190c.
Microwave the veggies for 4-5 minutes in microwave safe container. Take the water out from veggies.









Add the BBQ sauce, Chili Sauce, salt, and oregano to the veggies, mix well. Keep the bowl aside to let it cool down.









With the help of rolling pin, roll the bread slices. Once rolled the will look flat and all the sponginess would be gone.






You can keep or remove the side crust from the slices. My kids do not like eating crust so I took it off.
Spread the soft cheese on each rolled slice.










Grease the muffin tray with some oil spray.
Put the bread slice in each muffin hole, making it like a small bowl with gentle hands.













Now spoon the veggies in each bread bowl, top it with grated cheese. Place one olive / jalapeno on top.












Bake these lovely bread bowls on 190c for 18-20 minutes. Once close to 18 minutes the crust will be golden brown. If you want them crisper and cheese to be golden brown, you can bake up to 20 minutes.

















Mine were good to go after 20 minutes.













I serve these bowls for breakfast with some whole-wheat breakfast muffins and sometimes for evening tea with friends.

Stuffed Pizza Bread
























Ingredients:

Pizza Bread:
Whole Wheat Flour  - 1/2 cup
Plain Flour - 1/2 cup
Instant Yeast - 1 1/2 tspoon
Warm Water - 1/2 cup
Olive Oil - 2 tspoon
Salt                          - 1/2 tspoon
Red Chili Powder - 1/2 tspoon
Sugar - 1/2 tspoon

Stuffing:
Pizza Sauce               - 2 tblspoon
Italian Seasoning        - 2 tblspoon
Mix Veggies              - 1/2 cup (Mushroom,Carrot,Beans,Corn,Peas) Boiled
Cheese  - 1/2 cup grated


Method:

Combine whole-wheat flour, all-purpose flour, yeast, salt and sugar in a mixing bowl.
Mix warm water and oil in a measuring cup.
Gradually mix in enough of the hot liquid until the mixture forms a sticky ball.
The dough should be quite soft. If it seems dry, add 1 to 2 tablespoons warm water more;
if too sticky, add 1 to 2 tablespoons flour.
Mix/Knead until the dough forms a ball. Now tip it over to floured surface to knead 5 more minutes.
Transfer the dough to a lightly greased bowl. Cover with a sheet of plastic wrap, grease the dough as well.
Let the dough rest for 30-40 minutes before rolling. It will be risen slightly.
Once it's risen a bit or after 40 minutes, take out the dough onto floured surface and knead again.
Now roll it with rolling pin into a 1 inch thick and 12*12 square .










Spread the pizza sauce over it, sprinkle the italian seasoning.








Now spread the veggies over it, leaving half inch each side.









Now spread the grated cheese over the veggies.











Roll it into a shape of log carefully, tucking the each end in carefully.





Now shape it into a ball by taking the both end inside and joining with each other.










Transfer it into a greased and floured baking sheet.
Let it sit for 15 more minutes, while preheat the oven at 200c.
Make few slits over the pizza bread.










Once oven is preheated place the baking sheet on centre rack and bake it for 15-20 minutes or until the crust starts to turn golden.
Take it out and let it cool down a bit before service.
This bread can be served with soup, shake or coffee.

Whole-Wheat Pizza Bowl/Katori






























Ingredients:

For Pizza Bowl/Katori :

Whole wheat flour                                    - 1 cup
Sugar                                                         - 1/4 tspoon                            
Yeast                                                         - 1/4 tspoon
Italian Seasoning                                      - 1/2 tblspoon
Baking Soda                                             - 1/8 tspoon
Baking Powder                                         - 1/2 tspoon
Red chili powder                                      - 1/8 tspoon  
Salt                                                           - 1/8 tspoon
Oregano                                                    - 1/2 tspoon
Ground Black pepper                               - 1/8 tspoon
Warm Water                                            - 1/2 cup or as required to knead the dough
Pizza Sauce                                              - 4 tblspoon

For toppings:

Assorted veggies                             - 1 cup (I used boiled corn, peas, mix peppers, mushrooms, olives)
Grated Cheese                                 - 1/2 cup
Soft cheese                                      - 1/4 cup (Any flavored or plain)






















Method:

Take a mixing bowl, add flour, sugar, yeast, salt, pepper, chili, oregano, Italian seasoning, baking soda and powder. Whisk well.









Now with the help of warm water start kneading the dough. Make it a bit sticky.









Keep it aside until it doubles up in size. It takes almost 1 to 1 n half hour.
Once it doubles up in size, preheat your oven to 200c.
Tip the dough over to the floured surface and knead it again.
Roll it to 1 inch thick and 7 inch big circle or square.
Spread the pizza sauce evenly over it.
Take a cookie cutter and cut the 3 inch size of circles from that rolled dough.









Now grease a 6 cup muffin tray.
Place the cut circles on each muffin cup.









Put some veggies over it.












Now put a blob of soft cheese over veggies.












Now sprinkle grated cheese over it, generously. after-all it's for our kids too.












Now bake them on to 200c for 20-25 minutes or until the cheese starts to turn golden.
Take them out and let them cool of cooling rack.
Do not leave them to cool in the muffin tray or the base will get soggy.
Whole wheat pizza bowl are ready to serve.

Quick Fix Cibatta Pizza















Ingredients:

Cibatta Slices                            - 4
Mix Vegetables                         - 1 cup (Peas, Carrot, Spring Onion,Corn Kernels,Mushroom,                                                                               Cabbage, Broccoli)
Pineapple                                   - cubes 10-12
Black Olives                              - 4 tblspoon
Italian Seasoning                       - 2 tblspoon
Salt                                             - to taste
Pizza Sauce                                - 4 tblspoon (1 each slice)
Grated Cheese                            - Mozzarella and Cheddar mix



Method:























Pre-heat the oven on 200c .
Place the Cibatta Slices on a baking tray.
Spread the pizza sauce on each slice.








Sprinkle some salt and Italian seasoning on to the slices.









Now spread the mix vegetables on each slice.









Now place some pineapple cubes and black olives on each slice of Cibatta.









Now sprinkle generous amount of grated cheese on each slice.









Bake the Cibatta pizza slices for 15-20 minutes or until the cheese melts and get golden brown.









Cibbata Pizza Slices are ready to serve with hot chocolate and your choice of dips.
